Welcome Diaz Family!

Cecilia will be with us for one school year and Karla will live with another family starting on Sept 1st. They are from Mexico City and already have introduced us to so many hot peppers!

Arturo cooked for us a couple of fantastic meals. Thank you to his mother who he phoned several times (to Mexico) for advice :-) He did a very good job!

Paella the first night....here Karla is preparing dessert. Evaporated milk, sweetened condensed milk, limes and biscuits. Ceci made a tomatillo salsa. It was all so super yummy!
We also have family friends staying with us in various campers and some in motels....15 for dinner...
Lots of garlic cooked in hot oil until blackened then removed
Chicken thighs cut in half then browned in the oil
Some pork cut into pieces and browned in oil
Shrimp or prawns
Boil peas & carrots, set aside
Boil water with saffron threads
Boil artichoke and remove leaves
Slice green pepper into thin strips and boil for a few minutes

Start assembling....I turned my back for a moment and missed these steps. He's added the brown minute rice, saffron with water, and everything else. Then you let simmer for something like 20 min. I'll have to go ask again about these steps.

We forgot about the mussels!

 

The next meal is a traditional food served on Mexicos Independence Day, Sept 15

Because Arturo is returning home on Sat they requested this special dish.

 

Pozoles

Ancho Peppers, fry on skillet then add to pot cover with water and boil. He used 5 bags of this! Remove seeds and tops. Put into blender. Photo courtesy of the web.

Tomatoes were scorched and also added to blender along with a few million cloves of garlic!

He blended the stuff in the blender and then strained it all into the pot of boiling water. I stopped taking pictures at this point as things were getting somewhat crazy in my kitchen! In the pot are chicken breasts with bones, a couple of pork chops with bones and a cheesecloth with onions and garlic inside. Cumin added later. Salt to taste. Don't forget to add the hominy! The meat is removed, chicken shredded, pork cut up. Ladle into bowls. Add some meat then top with radishes, onions, oregano (we forgot this part), limes, Iceburg lettuce, tortilla chips.

Wow! Even the fussiest eater in the group liked this!

Homestay Reunion

I have so many awesome pics from this week. Will post as fast as I can. It is taking me a long time to post process them in between all the canning. Having so much fun!

We are so grateful to share our home with all of you from Germany. Thank you for coming!

After dinner we went for a walk along Fisherman's Rd and the sky was amazing!

We were sad to leave Svenja and her family but she chose to stay and hang out with her friends instead of coming to Vanvouver Island with all of us. So they house sat for us and did an awesome job. My flowers never look this good! Thank you Renneckes! Never mind the other odd jobs they did. We are forever grateful.

We and the Merkels left on Saturday in separate vehicles and drove as far as Hope. Using our "roger, roger" walkie talkies we entertained each other with anecdotes and some songs meant for long drives. We were also able to share some history of each town we passed by.

After checking into our motel, the owner highly recommended a hike to the Orthello tunnels. A must see she said and boy was she right!

 

Everyone kept saying, look there is a fish jumping! But I was afraid of looking over the edge so I just held my arm out and pointed the camera down and clicked. Do you see any fish jumping? Me neither....

Antonia was tired of her family and chose to ride to Nanaimo with us.
On the ferry from Tswassen to Duke Point. There was a major accident on the freeway into Vancouver, so we detoured as this was closer.

You can't really tell from this picture that it really was kinda' cold!
We met up with everyone again in Nanaimo. Merkels picked up their son in Vancouver and we did a major grocery shop. What a long day...
Our cabins were beautiful and came with a tree growing in the middle? And upstairs too! It was fondly named Loretta...

Our first meal in Ucluelet

West coast of Vancouver Island is very foggy in August and called Fogust by the locals. We hiked the Pacific Coast Trail on our first day. I never get tired of this hike.

The guys rented bicycles and road to Radar Hill. We girls explored a bit in Tofino.

....and then we went whalewatching, so much fun. Luna laughed and screamed every wave we hit. She had everyone on the boat laughing with her. I had tears streaming down my face from laughing so much.

I had a hard time focusing between the boat hitting the waves, Yuna's laughing, and the sea salt hitting my glasses. So I did the best that I could.
